Apple Puff
Pancakes are easily my family's favorite thing to eat. For fun individual sized
pancakes (like the one pictured) just follow the same directions, dividing
ingredients into 5 or 6 ramekins. You just may want to double
it...we always do :)
You will need:
3 eggs
1/2 cup flour
2 Tbs sugar
1/2 cup milk
1/4 tsp salt
2 Tbs butter
2 Tbs sugar
3/4 tsp cinnamon
1 large granny smith apple, cored,
peeled and thinly sliced or diced
Powdered sugar (opt)
1. Preheat
oven to 450 degrees.
2. In an 8
x 8 inch baking dish melt butter in the oven while it is preheating. When
butter is melted, remove from oven and stir in 2 Tbs sugar, cinnamon and apples.
Return to oven and cook until apples are tender, about 4 minutes.
3. Meanwhile,
combine eggs, flour, salt, and remaining sugar then add milk. (Mix
the flour and eggs together first to avoid floaty flour bits).
4. Pour
batter over cooked apples. Return to oven and cook at 450 degrees for 10
minutes, then reduce heat to 350 and cook until tested done (about 15 minutes
or so). Dust with powdered sugar and serve warm.
